Description

These roles are very demanding but extremely rewarding, with full responsibility for the catering, management and service of your own chalet.  The emphasis in this role is for you both to draw on your own impressive hospitality experience, creativity to design and deliver service of the highest possible standard. 

Chef Responsibilities:

  • Menu design: plan and cost, with close attention to budgets
  • Shopping, online ordering of supplies, visiting local suppliers
  • Stock control and management in your kitchen
  • Prepare and serve breakfast, afternoon tea, canapés, five course evening meal, petit fours, baked breads, ski room snacks and transfer picnics
  • Cater for children and nannies (including lunches and children’s teas when required)
  • Plan and prepare staff meals
  • Cater for guests’ special dietary requirements and allergies
  • Cater for special occasions and guest “wows”
  • Be flexible for last minute changes to timings and menus as per guests’ requirements
  • Responsible for food hygiene and general health and safety in the kitchen and dining areas
  • Assist with the maintenance of all kitchen facilities and equipment
  • Work closely with chalet team and assist with duties to ensure your chalet is running efficiently and to a high standard
  • Open and close the chalet to our exacting standards.

 

Chalet Manager Responsibilities:

  • Coordinate day to day operations in the chalet; service & housekeeping duties Daily meetings with the Chalet Team and a weekly meeting with RM
  • Management of staff rota and chalet inventory of equipment, linen etc
  • Ensure high morale and motivate staff to achieve high standards consistently
  • Ensure deadlines are met for financial, non-financial paperwork and weekly reports
  • Ensure any additional guest charges are processed i.e. ski passes
  • Communication with the Sales Team and your guests pre-arrival & post-departure to ensure all guests' requirements are being met i.e. dietary requirements
  • Plan “wows” and other special occasions for your guests
  • Delivery of high standards of service; through serving early morning tea trays, breakfast, lunch, afternoon tea, pre-dinner drinks, evening meal and after dinner drinks
  • To be always conscious of general hygiene, maintaining high health and safety standards
  • Maintain chalet cleanliness and presentation to exacting company standards
  • Snow clearing
  • Daily clean; evening turn down service; weekly clean; laundry duties; deep cleans at the beginning, mid and end of the season. 

Requirements

This role would suit a couple with the following skill set:

  • Recognised catering qualification and extensive experience
  • Experience in different cuisine for example: French, Italian, Asian etc.
  • Previous work experience in a fine dining
  • Excellent time management and organisational skills
  • Positive, flexible and adaptable attitude
  • Highly professional with a 5 star service mentality
  • Self-motivated, proactive and energetic
  • Great attention to detail
  • Team players with a sense of fun and willingness to help in other areas of chalet if needed
  • Previous general management experience
  • Computer skills, including Word & spread sheets
  • Administrative and accounting skills (preferred)
  • Desire to constantly please and take pride in their chalet.
